10 Minute Sunday Scampi
Happy Sunday friends! If you're not nursing a hellacious wine hangover (no judgement - I plan on going balls-to-the-wall after my #soberjanuary), you're prolly planning out your day and possibly thinking about what to make your family for dinner. If you haven't gathered by now, I am NOT the kinda chick who's in the kitchen all day making a feast for Sunday dinner - I need a 'wham-bam-thank-you-ma'am' type of situation when it comes to cooking. Me and a gazillion other moms out there too, which is why I love to sit down and share a recipe with y'all every Sunday morning. Who doesn't like a delicious recipe delivered into their email that's tried and true? If you subscribe - IT WILL BE:)
EASY for me means - freezer, pantry, NO STORE TRIPS. Especially when it's 25 degrees outside - that's a buncha BS. Luckily I have the ingredients for my fave go-to Sunday dinner - Shrimp Scampi with Linguine. It is so freaking simple, has like 7 ingredients, and everyone loves it. Keeping bags of frozen shrimp is a life-saver for me since we love them and they thaw in like 5 min. Let me know how it turned out!
*To make it a little healthier, use light butter and whole grain noodles!
Easy Shrimp Scampi Recipe
PREP TIME 5 minutes
COOK TIME 10 minutes
TOTAL TIME 15 minutes
SERVINGS 4 servings
1 lb linguine
1 tablespoon olive oil
4 tablespoon butter
3 garlic cloves, minced
1 /2 teaspoon crushed red pepper or to taste (we add 1 tablespoon)
1 lb shrimp, peeled and deveined
1/2 cup dry white wine
1/2 cup chopped parsley
kosher salt and pepper, to taste
Bring a large pot of salted water to a boil; cook linguine in boiling water until nearly tender, 6 to 8 minutes - reserve 1/2 cup of pasta water.
Add the olive oil and butter to a large skillet over medium heat.
Stir in the garlic and red pepper. Cook for 1 minute.
Add the shrimp to the pan and toss to coat. Cook the shrimp until bright pink and no longer translucent, approximately 2-3 minutes.
Using a slotted spoon, transfer the shrimp to a plate and keep warm.
Add the wine to the pan and cook for 2-3 minutes. Turn off the heat.
Return the shrimp to the pan and toss to coat in the sauce. Transfer pasta from strainer to pan with tongs. Toss shrimp and pasta together. Sprinkle with the parsley. Season with salt and pepper, to taste. Serve immediately. Add pasta water accordingly!!
